Apple Enchiladas

Yesterday I told you that I had made a dessert a little while ago and that I would share it with you this week.  Well, here it is:

Many of us are hooked on Pinterest and I am among those that seem to 'pin' all kinds of things and don't do any of them.  I decided that I was going to get off my duff and do SOMETHING!  So, I pulled up my boards and decided to look at my 'cooking' pins and saw "Apple Enchiladas".  Hmmmm, that sounds good - so, let's try that one.

First thing first - 

Needed apple pie filling, brown sugar, white sugar, cinnamon, butter, water, and flour tortillas.

(please ignore the fish in the background - the dogs broke a piece off and Mountain Man had glued it back on - well, we do keep it real)

Put the brown sugar, white sugar, water and butter in a sauce pan and bring to a boil, stirring constantly.  Reduce heat and simmer for three minutes.

Now, I don't have pictures of this step, but its really easy.

Place approx. a quarter cup of the apple pie filling in the middle of the tortilla.  Sprinkle with cinnamon.
Roll up, tucking in edges, and place in a prepared pan.
(see told ya it was easy!)

Pour sauce over the enchiladas.

Let stand for 45 minutes.

Place in a preheated 350 degree oven and bake for 20 minutes.

Serve with a scoop of vanilla ice cream.


Here is the recipe:

1 can apple pie filling
 (peach or cherry can be substituted)

6 flour tortillas

ground cinnamon to taste

1/2 cup butter

1/2 cup white sugar

1/2 cup brown sugar

1/2 cup water

Spoon approx. 1/4 cup apple pie filling down the center of the tortilla.

Sprinkle with cinnamon - roll up, tucking in edges and place seam side down in prepared pan (to prepare pan - rub with butter on bottom and sides.)

Place butter, both sugars, and water in medium saucepan over medium heat.
Heat to boiling, stirring constantly.  Reduce heat and simmer for three minutes.

Pour sauce over enchiladas and let stand for 45 minutes.

Bake in preheated 350 degree oven for 20 minutes or until golden brown.

Serve with vanilla ice cream.

Monday Menu

Okay, this is getting to be a habit!

First of all, we did not stick to the menu plan on Thursday, Friday, Saturday, or Sunday.  Why?  Well, we had the opportunity to go up to our camper in Dowling Park - so, we left as soon as the baby girl was picked up and headed   north.  We ate on the road Thursday night and then Friday and Saturday we ate with our friends.  Sunday night, after we got home, I fixed a pizza while we watched some football (and it was probably the best pizza I have ever fixed - don't ask me why, but it turned out really well!).

So, let's get with this week's menu plan.

Let me say that I have not started out very well sticking with the plan - the weather here has really taken a turn on the "cool" side - so, I fixed a big crock pot full of chili last night.  It was really nice and helped take the "chill" off last night - but let me show you what was planned and what will "probably" take place.

While I might not have taken pictures of what I did cook last week - I did take some pictures of a dessert I made - so, I'll post it later in the week.  Also, I'll show some of the projects that we have been working on around here (no, we haven't just been sitting around twiddling our thumbs).

Monday menu (okay, TWO days late)

Hello everyone!  Okay, I know that I'm late - I was all ready to do some cooking this weekend and have it ready to post this week.  However, sometimes things happen to put all that on the back burner.  In this circumstance, it was my mom falling in her driveway on Saturday.  We spent most of Saturday in the emergency room and she did break a rib, but it could have been sooooooo much worse since she fell flat on her back and hit her head.  Anyway, I spent most of the weekend with her - so I didn't get the cooking done.

Well, here is the menu plan for this week (and I can tell you that, so far, I have stuck strictly with 'the' plan.

Monday Menu

Good morning everyone!  I hope you had a wonderful weekend - things were a little busy around here (as usual), but some decisions were made.  I'll talk about them in a later post - today we are talking food.  

It is also confession time - I did not cook any night the last week of September.  What?  I think that we are a little different than everyone else (no smart comments from my children please).  You see, I think that everyone else eats out the first of the month - when they have "extra" money.  While I 'hunker down' and cook at home the first three weeks - but by the time that last week of the month comes I'm sick of cooking.  So, Mountain Man indulges me and takes me out to eat (of course, he just might be tired of my cooking - LOL!)

Last week I was back cooking at home, for the most part.  To tell you the truth I can not remember what we ate on Sunday or Monday - isn't that awful?  Here is the plan for Tuesday through Saturday:

Tuesday, October 2: Fried Chicken, Mac and Cheese, Salad
Wednesday, October 3: Chicken & Yellow Rice, Salad, Garlic Bread
Thursday, October 4: Bar B Que Pork Sandwiches, Chips
Friday, October 5: Dinner Out
Saturday, October 6: Dinner at my Mom's

Yes, I changed the menu for Wednesday night when we had company - I thought we would have Country Ribs, but it rained just about every afternoon last week and I was afraid that it would rain Wednesday, so I switched to Chicken and Yellow Rice.  I cooked a whole chicken on Tuesday in the Crock Pot and then deboned it and made the dish on Wednesday.  Made it much easier on everyone.

Now, let's move on to this week.  I have done the plan for the entire month and will be doing the grocery list today - to make our monthly grocery store run.  We are just about out of everything and our freezer is just about empty. This is going to be an expensive trip!

Here is the plan for this week:

Sunday, October 7 - Left over Bar B Que Pork sandwiches, Oven Fries
(I fixed the pork in the crock pot last week)
Monday, October 8 - Left over Country Ribs, Potato Salad
(MM fixed the ribs on the grill Saturday during the day)
Tuesday, October 9 - Spaghetti, Salad, Garlic Bread
Wednesday, October 10 - Chicken Enchilada Casserole
Thursday, October 11 - Ham, Great Northern Beans, Cornbread
(Crock Pot meal)
Friday, October 12 - Pizza
Saturday, October 13 - Chicken Quisadilas
Sunday, October 14 - Grilled Steak, Baked Potato, Salad

As you can see, I fixed a lot of stuff in the Crock Pot last week and we are eating it this week.  It does make life easier, and I'm really lucky in that Mountain Man will eat just about anything.

Monday Menu

So, I've been a little busy doing all kinds of things other than what I should be doing - which includes planning the menu's for this month.  (It's October already - how did that happen????)  Can I tell you what  -  well, here is a list of a few things - 

1. Mountain Man having me in Sebring several days looking at new golf carts.   Yes, it is a big decision in this household as to what golf cart to buy.  Who knew that there were so many choices to make - 
color of the body, 
the roof, 
the seats, 
size of the tires, 
what dashboard, 
steering wheel
 - even what color you paint the inside of the roof 
(a different color than the outside - Really?).  
In fact, he is back in Sebring today talking to the guy and trying to make the final decisions.

2. Selling the motorcycle last week (thank you Lord)!  
But that also means that Mountain Man had to deliver it to Tampa.   
He did get what he wanted for the motor, so we can't complain.

3.  Looking at a 'new to us' truck.  You see, MM has always wanted a King Ranch 4 X 4 (actually, this is the first truck that he has owned in like 20 years that is not a 4 X 4).  Anyway, he knows a guys here in town that has a truck that he has been "coveting" and this guy decided to trade it in on a new Mustang (yeah, you can't figure guys, right?).  So, we have been to the dealership twice - once to put our name on the list, and once to actually look at the truck.  Now, the funny thing is, I think he has talked himself out of buying the truck.  I don't know that for a fact, but we shall see.

4. Now, this is the big one - and I'm not even sure I should share it yet. 
But you know me, I just can't keep a secret.

So, here goes - 
We spent three days in the last week looking at houses - to buy.
Yes, I know that I said that we were just going to rent for awhile, but I don't think this renting thing is for us.

Anyway, we are looking, but we haven't found "the" house. 
(although I am leaning toward one, but it would need to drop in price a lot!)
So, while we are looking - and will continue to look - as of right now, we have decided to "hunker down" and just stay here.  We do still have until January on our lease - so we shall see.  Let's just say that we are open to the possibility of buying another house here.

So, the point to all this is - I  have NOT done the menu's for this month yet.  It will be done in the next few days (maybe the weekend), but this week will be 'off the cuff'.  

I do know that we will be having country ribs, potato salad, baked beans, garlic bread, and peach cobbler Wednesday night.  Why do I know this?  We're having company - so I know what I'm fixing then.  Other than that - I have no idea.
