Monday Menu


Good morning Opps, Good Afternoon everyone - I hope everyone had a fantastic Easter!  I know that at our house we had a fabulous time with Mom and the "kids" here for Easter dinner.  I think you might remember that last week I had not planned on a special dinner on Easter Sunday (don't know where my brain was when I planned the menu last month), but I changed everything up last week, and I do mean everything.


So, lets go ahead and talk about last week.  I'm not going to mince words - it was HORRIBLE!  I think I only fixed one meal that was on the menu for the entire week.  Things just kept coming up that interfered with the "plan", and the "plan" just got thrown out the window.  I was really pretty bummed out, but then again, sometimes you just have to go with the flow.  The only good thing that I can say is - we were able to go out to eat with the kids (for our sil's birthday - didn't plan for that either) at a new restaurant here in our neighborhood.  It's a Mexican place and the food was really good; however, they need to work on the service end - but it was their first week open and were not expecting to be slammed.  We talked to one of the owners about the service issue (Justin and I did not get what we ordered and the waitress never checked back with us or refilled our drinks - not good).  She apologized, assured us that she was having a meeting with the staff after closing that day and asked us to please come back and give them another try!

Easter Dinner was fantastic - Ham, fresh Green Beans, Squash and Zucchini casserole, Candied Yams, and rolls.  Then we had strawberry shortcake for dessert.  Yummy!  Now we are having leftovers for lunch!  That's a good thing!

Well, let's talk about going forward this month - we have several events happening this month - including mom's birthday and Melissa's baby shower that I am co-hosting.  I've really tried to make sure to take into account these special events in the menu plan this time!  We are even hoping that we can get away for a few days (maybe a week or two) the end of April/first of May. 


 So, what is on the plan?

Monday, April 9 - Fried Fish, Oven Baked French Fries, Corn Bread
Tuesday, April 10 - Southwest Chicken, Spanish Rice
Wednesday, April 11 - Spaghetti, Salad, Garlic Bread
Thursday, April 12 - Crock Pot - Smothered Steak
Friday, April 13 - Movie Night, Pizza
Saturday, April 14 - Chef's Choice
Sunday, April 15 - Grilled Pork Chops, Corn, Broccoli

In case you are wondering why I never list the breakfast menu or lunch menu on my monthly/weekly menu plan.  Well, for lunch we usually have left-overs, and to tell the truth, this is the one time that seems to be the time we eat out.  Why?  Well, we seem to be doing our running around and away from the house (plus, lunch is cheaper!)  

So, how about breakfast - well, that is Mountain Man's territory - yep, you read that right.  Mountain Man is in charge of breakfast.  How did that happen???  Well, when I was working and he was at home full time he got in the habit of fixing breakfast for us while I was getting ready - and he has just kept it up (and I "ain't" complaining!)  Does that mean I never fix breakfast - of course not.  In fact, tomorrow I will share with you a breakfast recipe that I fix and then put in the freezer so we can pull it out as we need it.  Be sure to come back for that!

Even if you didn't, remember, all you have to do is get back on the plan 
today - that's what I'm doing!

    1. Karianne - thank you for the kind comment. BTW, if you think this is too organized - just do a week instead of the month plan that I do. It just takes a little while (if you want, please read under the tab menu planning above to see the steps I use, or I'd be glad to help you in any way I can - just let me know.

Where does time go?

I have really fallen off the blogging wagon I guess.  I can't seem to get a schedule down so I don't post - but it's been almost...
