Monday Menu

Well, last week did not go as well as I had hoped.  I was right on target Monday night fixing the Jambalaya.  Tuesday I got everything ready for the Asian Chicken and asked Mountain Man to put everything together and turn it on around noon.  Well, that was NOT a good idea - to make a long story short, however it was somewhat funny, the Asian Chicken was not edible.  It might have had something to with the half of a container of peppercorns that was dropped into the pot, and all over the kitchen.  Anyway - that started the downward turn.  The rest of the week was just hit and miss.  So, I will pick myself up and get back on target this week.


I know that it doesn't seem as though I stay with the menu very much - but I was really doing a pretty good job until I started working.  I'll get it back together - this just shows that everyone has trouble occasionally.   You just have to take it one step at a time and, if something happens and you don't fix what you had planned, just get back "with the program" as soon as you can.  Remember - stuff happens - that's life.  Don't sweat the small stuff.


That said - what is the plan for this week - I think it just might be something I can stick with.




Monday, May 7 - Black Beans & Rice w/ Sausage
Tuesday, May 8 - Chicken Burritos, Spanish Rice, Refried Beans
Wednesday, May 9 - Spaghetti, Salad, Garlic Bread
Thursday, May 10 - Not sure 
(it's my birthday - so we might go out or Mountain Man might cook)
Friday, May 11 - Movie Night, Pizza
Saturday, May 12 - Chef's Choice
Sunday, May 13 - Mother's Day - Grilled Chicken, Corn on the Cob, Tossed Salad

Next week has a few special things happening -  my birthday on Thursday and then Mother's Day on Sunday.  We might eat at home on Thursday night then eat out in Sebring on Saturday night for my birthday dinner.  Then Sunday we might will have everyone over to the house (meaning the kids and my mom) and just grill out - something simple and easy.  I think that will probably be the plan.

Monday Menu

I really did NOT stay on the menu this week at all!  Monday I had taken the steak out for our Monday night dinner when I got a call from my mom. To make a long story short (and I won't bore you with all the details) I made an emergency trip to Lakeland and my mom ended up in the hospital for the week. After driving back and forth every other day (staying with a friend one night and coming home the next) and too many tests to count, I was able to bring her home Saturday afternoon.  To say that I was not on the "menu train" would be a major understatement!  

I spent Sunday trying to recoup from the that two hour drive one way I made six times last week and the long hours of sitting in a hospital room - I don't think anything will wear you out more than sitting in a hospital waiting to find out results of tests!  Anyway, I am back home now and will do my best to get caught up with all the housekeeping that was put on hold all last week.

Now, on to this month's menu - can you believe that it is already April???  Where is this year going??  It just seems to be flying by whether we are ready or not - in a little over two short months I'll be a first time grandmother (or, as I would like/hope to be called "Nana").  The kids (my sweet daughter and sil) are still working on getting the nursery ready and the baby shower will be in two weeks.  Can't wait to show you all the craft projects that I have been working on  and the shower - but that will be another post in the future.

  I seem to be straying off topic today - maybe that is my SOT syndrome (Straying Off Topic) kicking in -

Sunday, April 8 - Chicken & Yellow Rice; Salad



Now, I will give you a spoiler alert - I'm not on "menu" already.  Mountain Man decided yesterday that he wanted smoked Bar-B-Que chicken tonight - so that is what we are having.  After all, sometimes you just have to go with what the hubby wants (and IF he is cooking it - who's to argue, right?).

Monday's Menu



Hello everyone!  I hope that you all had a fabulous weekend - I know that MM and I had a great week last week and were very busy this past weekend helping my daughter and sil paint the nursery and start getting ready for the new baby.  This is such an exciting time for all of us - and to tell the truth, I'm really enjoying helping with the nursery! (All the pictures and an explanation of what we are doing will be posted in the future - I just want everything done so you will be able to see the great room we are creating for Lorelia!)

Now, on to the real reason for this post - the menu plan!  Well, we did NOT do real well staying on target last week, but I had a really good reason why.  We went camping (finally!) and it was WONDERFUL

We really lucked out with our last minute reservations - usually you can't get a spot right on the water, but I called the Reservation Line for Florida State Parks on Monday and made our reservations for three days - starting on Tuesday night!  We were at Bahia Honda State Park and it was the best three days EVER!  We didn't do anything except relax, eat and sleep - and MM did most of the cooking outside - which is even better! 

However, we did vary from the menu plan as we had grilled Hamburgers and Country Ribs (along with corn on the cob and baked potatoes). Now, that does not mean that I busted the budget - all the food we took with us was from our freezer.  So, while it may not have been "on the menu plan" for last week,  I had everything in house - so NO trip to the grocery store!  Plus, there were so many left-overs that those two items were all we needed for the three days - and we even brought home hamburgers for lunch at home!  I'll do a post on the trip later in the week, but just know that we saw some wonderful wildlife that I have some neat pictures of!

So, what about this week?  Well, I'm determined to get back on the plan this week, since we are back home!  I'll also get all the figures ready from the budget to see how we did over all last month and what I have planned for this month.  (Yes, if you are looking at the picture above - it is the February calendar - but IF you look closely you will see that  the first week and a half of March is at the bottom.  Don't worry, I'll have the March calendar next week!)

 
Now, here is the plan for this week:

Monday, March 5 - Chicken Salad
Tuesday, March 6 - Waffles & Bacon
Wednesday, March 7 - Easy Pork Chops & Potato Dinner
Thursday, March 8 - Easy Taco Soup
Friday, March 9 - MOVIE NIGHT - Homemade Pizza
Saturday, March 10 - Birthday dinner out
Sunday, March 11 - Grilled Chicken

As you know, MM does not seem to like the idea of "Taco Soup", since every time I have TRIED to fix Taco Soup  he comes up with some excuse for me NOT to fix it - but I'm going to try this one more time. IF he comes up with an excuse not to eat the soup this Thursday - well, it will be taken permanently off the menu options.  Sometimes you have to do what you have to do.  Just remember - it doesn't matter how good something is (or economical) - if your family won't eat it - then you just need to let it go and move on to something else!

I have really fallen off the blogging wagon I guess.  I can't seem to get a schedule down so I don't post - but it's been almost...
